This chicken with mushrooms recipe is from the series of very cheap food you can make at home. It is very simple to make, can be considered low-carb if served with a low carb side dish (red quinoa, broccoli etc.) and it is very tasty. And it costs only 1.2 eur per portion, if you don’t count the side dish you are using.

Chicken with mushrooms in tomato sauce
Servings: 6 (1.2 eur/portion)
Preparation time: 20 min
Cooking time for the meat: 30 min
Cooking time for everything together: 40 min
Total time: 1.5 hours

Ingredients
- 600 g of chicken breast (5 eur)
- 1 green pepper (0.2 eur)
- 500 g of mushrooms (1.6 eur)
- 3 big carrots (0.2 eur)
- 2-3 young garlic sticks or garlic cloves (0.1 eur)
- 150 ml tomato sauce (0.3 eur)
Directions
- Cut the meat into cubes and fry it in few smaller batches until it gets slightly brown.
- Cut the garlic, pepper and carrots according to your taste and stir fry them on medium fire until they get a bit soft.
- Add the cut mushrooms too and let them fry for extra 5 min.
- You can now add the cooked meat and tomato sauce, season with salt and pepper and let them cook on low fire for 20 min.
