Salmon is one of the best fishes you can eat. Its advantages are very clear: it is very easy to digest, it is not smelling as much as other fishes and it doesn’t really have any bones. So for people who are not too much into fish, this is a perfect introduction.

Salmon with garlic and lemon with vermicelli side dish
Season salmon with powder garlic, salt and pepper. Put a tiny bit of butter on it, sprinkle with fresh lemon juice and place two lemon slices under each salmon piece. Bake the salmon at 180 ºC for 10-12 min. Prepare the vermicelli, add 1 tbsp of fish sauce, 1 tbsp of soy sauce, salt and a good sprinkle of lemon. Season your noodles with fresh mint and raw almonds. My favorite way of eating the salmon!

Season salmon with dried thyme, salt and pepper. Put a tiny bit of butter on it and bake the salmon at 180 ºC for 10-12 min. Serve with fresh salad and avocado, seasoned with olive oil, salt and lemon.

Salmon pasta with corn and shallot
With all the salmon leftovers or the pieces that are not the most beautiful to serve as is, shred the salmon into small pieces, make sure it as no bones and mix it with the following ingredients: cooked pasta of your preference, few tbsps of corn, one freshly cut shallot, light mayonnaise, salt, pepper and a generous sprinkle of fresh lemon. You will be surprised about this delicious blend of tastes.

Salmon sushi
This recipe is a bit more time consuming, but it is definitely worth it. Cook the sushi rice according to the instructions on the package. Let it rest for a few min and mix it with sushi vinegar, salt and a bit of sugar and let it cool down at room temperature. In the meantime prepare the nori (cut it in half), cut some cucumber, red pepper and avocado and slice the salmon into long pieces. Place the nori on a flat surface, spread the rice over it, salmon and one of the veggies and roll it carefully. Make sure you have a very sharp knife for cutting the roll. Serve with soy sauce and wasabi.

Salmon meatballs
Frying is never too easy, but the advantage of this recipe is that you can make a lot of meatballs at the same time and have them for more days with different side dishes. You will need for this recipes: 200 g of salmon, 1 piece of bread, 3 tbsp of bread crumb, a bit of flour for rolling, 2 garlic cloves, 1 onion, lemon, parsley, salt and pepper.Sauté the onion until golden.
Cut the raw salmon into small pieces, making sure no bones are left in. Mix it with the rest of ingredients (use only one egg) and add the fired onion. Roll small balls of the mixture, pass them though flour and fry them. Once all of them are fried, pour 2 cups of water over them, bring them to a boil and keep it on low fire for 5 min. At the end mix in an egg yolk and the juice from half a lemon.
You can eat them with various side dishes. I used mashed cauliflower and vermicelli with carrots and kale.
