I tend to overuse the name “turbo”, but i think it just fits so well this turbo omelette. Omelettes are supposed to be rather simple foods, eggs, salt and pepper. But just turbo them and you will have a simple, warm, delicious and super nutritious meal!
Besides, avoid the bread, and it is a perfect low carb meal.

Turbo omelette

Ingredients
- 4 eggs
- 4-6 slices of chorizo
- 3 tbsp of shredded cheese (or mozzarella)
- caramelized onion (optional)
- sour cream (at your discretion)
- salt and pepper
- basil (optional)
- oil for frying
Directions
- First the caramelized onion: it is optional, but really recommended. If you make it yourself this will become a really tedious recipe, but more tasty. You can buy it in your store ready caramelized or simply skip it, if you don’t find it.
- Mix the eggs with salt and pepper and the caramelized onion and start frying it in a pan with a bit of oil on low-to-medium fire.
- Flip the omelette once its brown on the bottom.
- Immediately add the chorizo.
- Add the cheese. Can be mozzarella, too.
- And then the sour cream. At this point you can sprinkle some dried basil, for soem extra twist, but it is fully optional.
- Fold it like in the picture, so that the cheese can melt and the tastes can blend.
- That’s it! Serve it with more sour cream, it is absolutely delicious!
