Banana cookies and cakes are really great, raisins butter cookies are great, walnuts are great: combine them all and you get this cookie.
Make it fast and it is perfect! Except if you are getting sores from walnuts: now seriously, isn’t your mouth getting a bit painful from walnuts? I thought that is normal… and it turns out I might be a bit allergic? In any case, I am still eating these delicious cookies.
Banana-walnut cookies
Servings: 20 (or 12 if you opt for two thirds)

Preparation time: 15-20 min

Ingredients
- 250 g of all purpose flour or integral flour (165 g for 2/3)
- 125 g of butter (83 g for 2/3)
- 2 tbsp of milk (4-5 tbsp for the integral flour version)
- 1 egg (I use a banana if I make 2/3)
- 2 tbsp of syrup of choice or sugar
- 3-4 hydrated walnuts
- few raisins
- 1 tsp of baking powder (less for 2/3, I don’t measure it)
Directions
- Mix the flour with the baking powder.
- Grate the cold butter on the flour.
- Mix the rest in: 2 tablespoons of milk, banana, syrup, walnuts and raisins.
- Mix until they are well combined, 1-2 min. For the integral flour version let it rest 10-15 min.
- Spread it on a floured surface to 1 cm thickness.
- Cut out of it round shapes with a small glass.
- Bake it at 180C for 23 min. For the integral flour version bake it at 175C for 22 min.
- And the banana-walnut cookies with raisins are ready.
