Tuna spread with pearl onions

Tuna is a great pantry protein to have for the days you have no time or other ingredients to cook with. It is similar to my tuna-sriracha spread, in the sense that it has mayo and sriracha, but on top of this I add some new ingredients:

  • 1 can of tuna with the water strained as much as possible
  • 2 tablespoons of mayo
  • sriracha to taste
  • 1-2 diced cucumber pickles
  • pickled pearl onions to taste
  • ground black pepper

Mix all the ingredients. Add some pickled juice from the onions or cucumbers if it needs to be softer. Place in a container and leave overnight. It can actually be eaten immediately, but it is better overnight. It goes great as a work lunch next to some pieces of bread, it is high in protein and very delicious.
