This recipe called Chana Masala is a simple chickpeas and curry based dish that is very easy and very cheap to make. Chana Masala works wonderfully as a side dish or even main meal next to rice. Although it is very nice next to a steak, I love to eat it with sunny side ups and it goes perfectly with eggs. Therefore it is a perfectly fine choice for even a low carb meal.
Chana Masala

Ingredients
- 1 jar of canned chickpeas (1.5 eur)
- 1 can of chopped tomatoes (0.8 eur)
- 2 cloves of garlic
- 1 onion (0.2 eur)
- 1 tbsp of fresh ginger
- ¼ tsp of minced cardamon
- ½ tsp of curry
- 1 tbsp of oil
- salt and pepper
Directions
- Fry the onion in a big wok and add after few min the ginger and garlic and let them get softer, but make sure they won’t brown.
- Add the curry and cardamom and let them infuse for a minute.
- Pour in the tomatoes can and simmer it until it forms a paste.
- At this point season with salt and pepper to taste.
- Add the chickpeas and cook for 10 more min.
- Sprinkle some parsley or coriander on it and serve hot with sunny side up eggs.
