This chicken Madras recipe is a quick one and relatively cheap. A great change when you want to have something different than Tikka Masala.
Chicken Madras

Ingredients
- 600 g of chicken breast (or thighs) (4 eur)
- 1 tsp of minced garlic
- 1 tsp of minced ginger
- chilly of your choice to spicy it up
- 5 tbsp of tomato paste
- 1 tsp of turmeric
- 1 tsp of powder cumin
- 1 tsp of paprika
- 1 tsp of powder coriander
- salt
- 2 tbsp of madras powder (1 eur for all spices)
- oil for frying
Gravy
- 1 onion (0.2 eur)
- 1 carrot (0.1 eur)
- 1 small red pepper (0.2 eur)
- 2 cloves of garlic
- 1/2 tsp of ginger
- a bit of cabbage (0.3 eur)
- 1tsp of turmeric powder
- 1 tsp of powder cumin
- 1 tsp of powder coriander
Direction
- Start sauteing the onion, carrots and pepper in few tablespoons of oil. Cabbage is optional, but you should add it if you have some:
- Once they get a bit soft, add the garlic, ginger and turmeric, coriander and cumin.
- Blend it until it gets very smooth. Can be smoother than in the picture below, which is recommended, the smoother, the tastier.
- In a big pot start sauteing the garlic and ginger paste in a bit of oil, together with the chilly.
- Add the tomato paste together with the turmeric, coriander, cumin, paprika an salt.
- Add the chicken and cook on medium fire for 5-7 min.
- Pour in the gravy and simmer on small to medium fire until the chicken is done and tender (~17-20 min).
- Add the madras powder.
- It is ready to be served with rice or naan.
