These beignets are very fluffy and delicious and can lasts you for a couple of days. They can be eaten as is or with powder sugar… or (my favorite way) with some sour cream and sour cherry jam. An absolute delight! And if you feel that they dry after a few days, just sprinkle some water over them and microwave them for few seconds and they are good to go!
Fluffy beignets with yeast
Servings: 15-20 beignets

Ingredients
- 300 g flour
- 20 g sugar
- 1 little pack of vanilla sugar
- 3-4 g salt
- 1 tsp lemon zest
- 260 g warm milk
- 12-13 g fresh yeast
- 1 egg
- oil for frying
Directions
- Mix the flour with the salt and the sugars (regular and vanilla).
- In the lukewarm milk, dissolve the yeast and add the lemon zest too.
- Add an egg over the dried mixture and also mix in the liquid. The final dough is supposed to be very soft like in the picture.
- Let the dough rise for about an hour until it looks like this:
- Heat the oil to medium heat.
- Start frying 4-5 beignets, depending on the size of your pot. You can scoop them with an ice cream scoop. Place it for a second in the hot oil, so that the dough won’t stick the the edges.
- Fry the beignets for minimum 3 min. If you leave them less, they might not cook in the middle. Here is how they look!
