This summer salad with walnuts will make a perfect quick lunch and, besides that, it is a very balanced in nutrients and healthy! It has proteins from the walnuts, fats from the cheeses and olive oil and lots of micro-nutrients and vitamins in the salad, apple and pear.
I use no salt for this salad, the combination between nuts, apple, hard cheese and salty cheese makes a perfect balance between sweet and salty. But the secret is indeed to use two types of cheese.

Salad with walnut, apple and cheese
Servings: 2
Preparation time: 10 min
Ingredients
- 100 g of salad leaves
- 1 shallot
- 2-4 triangles of hard goat cheese
- 50 g of salty sheep cheese (or feta)
- half an apple
- half a pear (optional)
- 2 handfuls of walnuts
- olive oil
- balsamic vinegar
Directions
- Cut all the ingredients according to your preference.
- Place first the salad, then add the walnuts, apple, pear and shallot.
- Add the cheeses too.
- Drizzle generously with olive oil and balsamic vinegar (not too much as it can be very strong) and mix well.
