Grilled peaches summer salad

I miss summer so I decided to document a grilled peaches salad that I made a while back inspired by What’s eating Dan? It is a very nice and creamy salad, fresh and fruity, perfect for a hot summer day.

  1. Grill two peaches first with the inside down. Of course, get the pit out. Then grill them on the skinny part.
  2. In the meantime, chop one big tomatoe and salt it.
  3. Peel off the skin from the cooled peaches.
  4. Make a vinaigrette with olive oil and a drop of balsamic vinegar.
  5. Add the tomatoes with the cubed peaches to a bowl, add some soft goat cheese, freshly chopped parsley or basil and the vinaigrette.
