I miss summer so I decided to document a grilled peaches salad that I made a while back inspired by What’s eating Dan? It is a very nice and creamy salad, fresh and fruity, perfect for a hot summer day.
- Grill two peaches first with the inside down. Of course, get the pit out. Then grill them on the skinny part.
- In the meantime, chop one big tomatoe and salt it.
- Peel off the skin from the cooled peaches.
- Make a vinaigrette with olive oil and a drop of balsamic vinegar.
- Add the tomatoes with the cubed peaches to a bowl, add some soft goat cheese, freshly chopped parsley or basil and the vinaigrette.
