Pumpkin bread is very similar to the banana bread. You can check out my banana bread recipe here. I used slightly different measurements for this pumpkin bread, I follow the recipe from https://preppykitchen.com/pumpkin-bread/.
Pumpkin bread

Ingredients
- 210 g of flour
- 1 tsp of baking soda
- 1/2 tsp of baking powder
- a pinch of salt
- 2 eggs
- 100 g of brown sugar
- 100 g of white sugar (the original recipe calls for 120 g)
- 60 g of milk (I use oat milk)
- 110 g of sunflower oil
- 300 g of pumpkin puree
- 1/2 tsp of vanilla extract
- spices: I used 1 tsp of cinnamon and 1.4 tsp of cardamom
Directions
- Preheat to oven to 175 C.
- Mix the dry ingredients: flour, baking soda, baking powder, salt and the spices of your choice.
- Mix the wet ingredients: mix the sugar with the eggs, add the milk and the oil and pumpkin puree.
- Combine the two bowls and add the vanilla extract too.
- Place a baking paper in your tin and pour in the batter.
- Bake at 175 C for 1 hour or until a toothpick comes out clean. Half way through, place an aluminum foil on top, so that you prevent the burning of the top.
- Let it cool down, slice it to your desired thickness and enjoy. It is moist, comforting and perfect next to coffee.
