This recipe of walnut cookies is so incredibly fast and easy. It takes 5 min to make the dough (of course, if you don’t choose to go in the wild and pick your own walnuts as I did) and these cookies keep fresh for long and are a great snack next to your coffee.

Walnut cookies
Preparation of the dough: 5-10 min
Baking time: 20 min at 170 C
Ingredients
- 160 g of flour
- 120 g of cold butter
- 40 g of powder sugar
- 80 g of grind walnuts
- lemon zest
- 2 tablespoons of fresh lemon juice
- vanilla essence
- extra powder sugar for decoration
Directions
- First thing: I am not sure what machines people have home to grind walnuts, but I don’t have any. So I use my blender to do that and it works just fine… though some walnuts will fly in your kitchen, so I use a paper towel to cover the recipient in which I blend.
- Mix the 160 g of flour with the 40 g of powder sugar.
- Add the walnuts, lemon zest, 2 tablespoons of lemon juice and vanilla essence.
- Grate in the cold butter.
- Mix only until combined and let it rest in the fridge for a few hours to get cold.
- Preheat your oven at 170 C.
- Form the cookies into semi moon shapes and bake them for 15-20 min.
- Let them rest in the tray.
- Then pass them through powder sugar and enjoy them next to your coffee.
