When the zucchini season is starting you need to take advantage of it and use it for your meals. These zucchini boats are cheap, light, healthy and nutritious and you can cook more at once and have your lunch ready for 4-5 days. Moreover, they are low-carb too! So give them a try.
Zucchini boats with turkey

Ingredients
- 4 zucchinis
- 500g minced turkey meat
- 1 onion
- 2 cloves of garlic
- 3 tbsp of mungo beans
- 100 g tomato puree
- 2 eggs
- 1 yogurt
- grated cheese for topping
- oregano, salt and pepper
Directions
- In a hot pan add 2 tbsp of oil and start frying the meat, with no salt or onion, just by itself until it gets brown.
- In the meantime start carving the zucchinis with a spoon an keep the middle for the meat mixture.
- Start boiling mungo beans separately.
- Add the chopped garlic and onion over the brown meat and let them soften.
- Add 3-4 tbsp of the zucchini middle and the tomato puree and let them simmer for few min.
- At the end add the mungo beans, oregano, salt and pepper to taste.
- Let it cool for few min and add one whole egg in and mix it well.
- Fill in the carvings in the zucchini with the meat mixture.
- Cover them with yogurt mixed previously with one egg and sprinkle cheese over them.
- Bake them at 180 C for 30 min.
- They are ready to be served immediately as is or with some side dish like rukola, salad, cous cous with a bit of pesto or any of your desired side dishes.
